Salmon with Dijon Date Sauce

SERVES 6

The sweetness of dates and the pungent kick of mustard and clove enhance the richness of salmon. This sauce is thick and best painted on the salmon with a basting brush. Use generously.

INGREDIENTS

1¾ pounds wild salmon fillets, skinned, portioned into 6 pieces

Dijon Date Sauce

1/3 cup Dijon mustard

4 Medjool dates, pitted

1/3 cup filtered water

1/4 cup extra virgin olive oil

1/2 lemon, juiced

1 clove garlic, minced

Sea salt and freshly ground pepper to taste

1/3 cup green onions, thinly sliced

DIRECTIONS

  1. Preheat 350°F, Rinse and pat dry fish then cut into 6 portions. Remove and pin bones with tweezers if desired. Place in a shallow, tempered glass baking dish and set aside.

Dijon Date Sauce

  1. Purée all sauce ingredients in a blender until smooth. Brush sauce over salmon fillets.

  2. Roast for 7-10 minutes, depending on the thickness of the fish. If salmon is 2-inches thick it may take as long as 20 minutes to cook through but check after 10 minutes. Salmon is done when it is opaque, still tender, and flakes easily with a fork. The fish will continue to cook after removing it from the oven so keep this in mind when checking for doneness.

  3. To serve, top with additional sauce and sprinkle with green onions before serving, if desired.
